September for me is always my start of the year. I know it’s odd, but it’s because I normally take my summer holidays during August so when I am chilling on some nice beach, I get to clear my mind from all the stresses throughout the year. I then get to think about all my new projects and goals. Even my new year resolutions start in September!
This September especially I have more reasons than ever to begin the month on a good vibe and full of energy. This is because of a big event happening later this month for S and me, which we are very excited about. I promise I will keep you posted and give you an update on this next week.
But back to today’s post and another big announcement; (S is making a little drum-roll noise in the back ground)... I can now announce that I’ve become a guest collaborator of Perfectly Paleo, the UK’s first online source for Paleo supplies ! I’m very pleased to have been a part of this new adventure and I’m especially thrilled as today my first recipe is live on their magazine section!
Because it is never too hot to enjoy a delicious warm and spicy soup, although here in England have been quite chilli lately !... my first recipe as contributor on Perfectly Paleo is this beef courgette “ramen” noodles soup.
I made this traditional Japanese soup using a mixture of all my favourite foods, including beef brisket, enoki mushrooms, carrots, spring onions and red chillies. Whilst these are my favourite ingredients, of course feel free to have fun by adding as many foods you like. The contrast of flavours is what makes up the real spirit of ramen soup.
This comforting soup is so versatile and easy to make that I could prepare a different one for every day of the week. The only ingredient in this dish which needs time to prepare is the Dashi broth. It is well worth investing time to make the Asian broth as it is a fabulous basis of any other soup.
For my own version of ramen soup, I used courgettes to replace the Chinese-style wheat noodles and therefore turn this delicious spicy soup in a gluten free dish. That’s a bonus, isn’t it?
