Greek yogurt with warm red berry compote and chia seeds

Laura | Lau Sunday cooks

I’ve recently tried to set a routine by starting the day with a smoothy, after being motivated by Simple Green Smoothies. I saw myself having a smoothy every morning and just thinking about it, made me feel all healthy  !

I decided to start my cleanse challenge on a Monday, obviously !  Isn't it funny that we always want to start this kind of  health kick on a Monday, and if it fails, we make ourself feel better saying: next Monday then!

So, the day before, I went expressly to get some fresh ingredients for my Monday morning smoothy, but as I didn't know which smoothy I was going to make, I bought everything... red berries, kale, spinach, pineapple, oranges and apples.

Another important detail that I needed to consider was how I was going to blend the ingredients without not making noise at 6am. Living in a flat, I don’t think my neighbours would be very happy with me if I made it before heading off to work, would they ?!   So, whilst having a look on the website and I found out that the smoothies can be kept refrigerated in the fridge while still keeping its healthy properties. Great ! I could make at least the next two days worth of smoothies the night before.

To start with, I chose randomly a lovely green smoothy made from spinach, pineapple and coconut milk. Its creation was quick and easy as you would expected.  However, it looked a little bit ... hmmm, shall we say unappealing.

S, who had wondered in to the kitchen moan at the noise, asked:

- What the hell is that??!! - It's a smoothy. - Laura, that looks... disgusting! - Oh shut up! it just needs a touch of.. er.. Lightroom? - sure ok.. and what ?  are you meant to drink it? - For sure! it's a drink to clean your body of toxins. - I see... Good luck, then. I bet it will clean your body out tomorrow.

THE NEXT MORNING...

I woke up slightly excited about my new breakfast plan. So, straight after getting ready for work I headed to the kitchen to have my delicious smoothy. I opened the fridge door and I looked at it for a few seconds. Then, I said to myself, who are you trying to kid, Laura? - This smoothy looks anything everything but delicious.  But I did it, I drank it... and I felt sooo clean. Maybe too much.

After that experience and seeing that the smoothy had fulfilled its objective, - in my case, for a whole month, I decided to finished my cleanse challenge.  Now, I needed to do something with all the red berries that I had bought.

I didn't want to cook any pastry or cake, there was no point in spoiling my 1-day cleanse challenge, don't you think? So instead, I made another healthy breakfast, but this time, very delightful and appealing looking: Greek yogurt with warm red berry compote and chia seeds

I made the fruit compote from blueberries, raspberries and strawberries, along with chia seeds to get a thick consistency. I simmered it in fresh orange juice on a low heat. It smelled so good that I'd wish the photographs could have given  off or shown that aroma somehow.   Meanwhile, I placed two tablespoons of Greek yogurt into a wide tumbler glass and made layers with the warm compote. Finally, I roasted some coconut with ground and diced almonds to top to complete this delicate but delicious breakfast dish.

Enjoy.
